I just did this the other night. I stuffed mine with mild Italian sausage.

Scrape a bowl out of the zuke with a spoon, placing the zuke that you scrape out in a mixing bowl. Mix zucchini in bowl with meat (1 lb of beef or pork or whatever you like), an egg, bread crumbs, oregano, basil, minced garlic, and chopped onion. Put the meat mix into the zucchini, cover with tomato sauce, bake at 375 for 45 minutes (or until internal temperature reaches necessary temp for the meat you use). Remove from oven, top with cheese, and put back into oven for 5 minutes to melt cheese.

My husband, who hates zucchini, like this.

I've been looking for ways to get my husband to eat zucchini, and this sounds good, except that I don't eat tomato sauce. Do you think I could just skip it? Or would I have to substitute with something?

You can skip it altogether, and just make sure the meat mixture tastes good and is well seasoned (you can overseason it a bit to make up for the not seasoned zucchini). You can also mix in some cheese and/or a white sauce or canned cream soup if you like that.

I have about 8 zucchini's of that size on my counter right now, and I"ve already shredded 6 more before that are already in the freezer. the reason I grow so much zucchini is mostly for zucchini bread, choc. zucchini bread and muffins. I shred it and freeze it to use for baked goods throughout the fall.

I also like to julliene it with a julliene peeler to eat like pasta with sauce and cheese but lower carbs of course.

They keep fairly well if you are going to use them in baked goods (i.e. shredded). They don't do so well if you are going to slice and saute.

Or you can make the baked goods and freeze those. Makes for nice moist muffins, quick breads and cakes.

Yummm, chocolate zucchini cake..... and lemon zucchini muffins.

My favorite way to cook up zukes is to slice them and slice some onions and sautee them with some oil and soy sauce and then sprinkle with sesame seeds. Yumm Benihana style.
