Mexican chocolate pudding

Dad wanted chocolate pudding tonight. :-) Mom was happy to make him some, and then she realized she was all out of cocoa. :-( But Mom did have Mexican drinking chocolate on hand... and it turned out that it makes some very tasty pudding! I know that it's available in WV, of all places. Granted, I live near the capital city. Anyway, I was first introduced to Mexican Hot Chocolate by my friend's mom. Yum!

The only kind I have seen here is Abuelita. I may have to try some of this!

Measuring dry cocoa powder can make a mess, and it takes a while to get all the lumps out while you're whisking it with the sugar, so making pudding with the sweetened tablets instead struck me as a real improvement in ease and speed. And yummy!

If you like your chocolate crunchy, then it could be eminently suitable for nibbling plain! ;-) Anyone judging Mexican chocolate by American assumptions is liable to miss the whole point, though -- I actually saw an article by a so-called professional cook dumping on it for being 'gritty'.

I was going to say the same thing. :) I've been nibbling on that stuff since I was a kid--my grandmother always kept a box of the Ibarra brand around (I've tried the Abuelita brand, and let me just say... no thanks). I have most of a box sitting in my pantry now. Will have to try this recipe soon.
