Yum! My husband made me eggs benedict for breakfast yesterday (I requested the home-made hollandaise, told him he could do whatever else he wanted with it) but I may ask for crab in it next time! :D

Seafood Benedicts are always WINtastic :-) something about yolks and seafood that's pretty much perfect without crushing you entirely like ham at a brunch.

As far as seafood goes, I've only ever had benedict with crab... what other seafood have you tried? I'm wondering if shrimp might be any good.

lobster tail was killer, scallop was pretty tasty but kind of awkward to eat as far as crustaceans or mollusks go. Fishes can be pretty interesting as well; Gravlax was super tasty since you had the runny yolks balancing the salty from the salmon, and I want to give this a try with smoked herring or smoked sturgeon.

I've thought of using things like prawns, shrimp, langoustines and crawfish as well; shrimp sounds to be the most doable since you can get nicely sized ones to easily arrange on an english muffin.
