freezing ratatouille

Some friends just had a baby, and I would like to cook them some food so they have one less thing to worry about while adjusting to the new baby. I'm going to make ratatouille, but I would like to freeze some of it so they have something they can just pull out of the freezer and reheat ( Read more... )

that is so good to know, thanks. It's something that the new mom likes a lot, so I was hoping it would be nice comfort food.

Chicken pie freezes perfectly. I make the crust, cook and cool the filling, fill it, seal it, freeze it... cook it straight out of the freezer, and it's like fresh.

Ratatouille freezes great. So does potato leek soup, but it might need a run under the blender when unfrozen because it might have separated (the flavor will still be great).

Ratatouille freezes beautifully. But peel the eggplants or it's not attractive later.
