help! i have some ingredients i need to use up

i have one eggplant and some black beans and pinto beans i need to use up. other ingredients i have on hand: chicken stock, diced tomatoes, frozen snap peas, frozen brocolli, eggs, cheddar cheese, salsa, pasta sauce and some more ingredients as well.

any recipe ideas for using up the eggplant and beans? thanks.

I have discovered that eggplant is extremely tasty roasted - dice it up into 1-inch cubes, toss it in some olive oil, put it on a cookie sheet and add some seasonings to taste (I just use salt and pepper). Roast at about 325 for about half an hour. I've also had really good luck throwing in zucchini and red/orange/yellow peppers, too.

I don't cook with beans often but you have beans and cheese and salsa, perhaps you could put something Mexican together?

i found a recipe that incorporates eggplant and beans so i'm gonna use that recipe. but thanks for the idea!

This recipe would modify well to reflect what you have. Swap the stewed tomatoes in the recipe for your diced, and use the beans instead of the chicken. The only thing we didn't like about this casserole was that we ran out of it.

Alternately, make a bean spread/dip, and baba ganoush (w/ the eggplant). Or stew the eggplant in the stock w/ the tomatoes and some spices and serve w/ crusty bread. Or a modified eggplant parmesan.
