lentil recipes?

I need some more lentils in my life, but I've never really cooked with them. Since its 90 degrees here today, I don't think a soup is a good idea, so please share some non-soup lentil recipes!

I like Mediterranean and North African food so anything in that neighborhood is good, but I'll look at anything.

Thanks!

This recipe does not result in a soup, but it does involve the oven, which you maybe don't want to do if it's really hot out. But it's really easy (just throw everything in one pot!) and it's a staple in our household now.

I use fresh ginger instead of powdered, since I like it better, and I always throw in something else we have lying around. So far we have added: tofu, yams/sweet potatoes, pumpkin, leek, uhhhhh I dunno stuff.

Ack! Sorry, forgot to say I use about a half cup to a quarter cup of the reserved bean liquid. :D

Dhal! Dhal is an Indian lentil curry, usually made with either yellow split peas or red lentils though you can also find versions made with mung beans or chickpeas.

http://www.route79.com/food/daal.htm - this is a wonderful simple recipe. It uses yellow split peas but just replace them with lentils, it'll work fine as long as they are the red kind and therefore go mushy.

i usually cook and then sautee in onion and garlic..throw in some tomatoes just to warm up. I imagine a nice fresh herb like basil or cilantro would be good.
but i am a simple, poor chef.
