I have a 2 month old bottle of "2 buck chuck" red wine sitting around, i think maybe 1-2 glasses worth are missing from the bottle, i'm hoping it's still ok to work with. i don't know much about the freshness of an already opened bottle of wine, it's been sitting in a cabinet not refrigerated at all ( Read more... )

Take a sniff of the bottle. If it doesn't smell horrid, take a taste. So long as it doesn't taste vile, it's good to drink/cook with.

I never buy "cooking" wines as I think they are a waste. I just use whatever it is that I like to drink.

Never use "cooking wine" for cooking. It's not good wine.

I'd suggest you taste the wine. If it tastes ok, use it. If it's been sitting a long time with air in the bottle, it may have oxidized, which would affect the taste. However, even if the taste is different, that taste might still fit the dish it's going to be used in. If, for example, you were going to make a spicy chili, you'd have more leeway than if the taste of the wine was supposed to be the main note, like in a wine sauce. Your taste is the final judge.

As I love wine and Hubby is indifferent, there are times when I'll have a bottle of opened wine hanging out for a while. hopeful that I'll be drinking it soon. But life interferes and sometimes this doesn't happen. So I just throw the old wine into some marinara-type sauce or beef stew or chili. It's actually really good in all three. Pretty much anything where it's one element of many and where it will be cooked for a while or at a high temp (like in deglazing).

I should be freezing the leftovers while they're fresh but I keep thinking "I'll get to it".

i dont understand this not finishing a bottle concept, but no, i would wager that if it isn't turned to vinegar, its very close. dump it.

Never use cooking wine. It will lower the quality of the dish. It's best to cook with a wine that you would enjoy drink as the flavor becomes concentrated when you cook with it. I would probably not use the wine you me tioned, not because it was a bad wine, but because wine should be stored in the fridge after opening. It probably won't hurt you, but it definately won't taste as good as it's supposed to.

Taste it and make sure it's not vinegary. If it is toss if it tastes ok use it.
