pheasant pie

I made Pheasant pies for my grandfather for his birthday this past weekend. I have made meat/savory pies before but this time turned out particularly well. You could use any meat besides pheasant, if you're not a game meat person. Chicken or turkey makes and obvious substitute for this recepie, but beef or pork, or no meat at all, would all be ( Read more... )

This sounds delicious! I'd like to try it with pheasant, but don't know where I could find it. Maybe I'll give it a shot with check or turkey.
Do you think it will be as good?

Pheasant has a very robust, rather unique flavor, kinda gamey and tough. Turkey would be more pallatable if you're not used to pheasant. Go a touch easier on the spices for turkey.
You could also use duck or goose, that would be a wonderfully flavor substitute. You can usually find frozen duck or goose (or capon) in the freezer section of the grocery store, but they are quite pricey. also I believe dartangan.com (sp?) is a good online source of game meats, probably still expensive.

My grandfather hunts and my grandmother refuses to cook game meats, so I cooked it for him as a treat. ;)

Oh! Also you could use groud turkey and just brown the meat a bit before adding it to the vegetable mix and cut the 1 hour meat roasting time. For this just 1 bay leaf and about 1/2 the spice mixture.
