More fish talk...

I know there's been a lot of fish talk in here recently, so please don't throw things at me and tell me to go look at the other fish posts! I bought some trout to cook for dinner tonight and I'm not sure how I want to cook it. Typically I just grill fish with olive oil & salt & pepper. I want something a little more interesting though. as far as cooking the fish, i can't really help you out that much. i don't like to get all pretentious with something like trout, which tastes very good on its own. however, i can suggest what you could top it with. you could grill your fish like you normally do and top it with some heck of flavorful homemade whipped butter. check this out ( ... )

ps - i realize butter is not the healthiest thing in the world, but it's also not the worst thing in the world for you. if you just top the fish with a thinly sliced medallion of it, then it's really not that bad for you.

butter tastes a lot better than smart balance and is nowhere near as bad for you as margerine is. so eat the damned butter!

if you think this is too high-fat/high-cal for you, then i guess do what the person below me suggested. that is an idea that, when all things have been considered, is a pretty awesome idea.

The best way to add flavor to fish (without adding a lot of butter--had you not asked for low-cal options I'd have suggested baking it with an herb butter on top) is citrus. Marinate it in lemon, lime, or orange juice mixed with a little olive oil and maybe some garlic or rosemary, then grill.

Citrus is great on fish... every fish or meat I prepare takes well to Goya's Mojo Criollo. It's a citrus-based bottle marinade with cumin, black pepper & some other spices.

mmm I didn't end up cooking it tonight, but I think I am definitely going to go the citrus route and marinate it in some OJ & lime juice. Thanks for the suggestion!

I would say some olive oil, and grill some diced medium-flesh fruits (mangos or pears or such) in the oil before grilling the fish. Throw in some dill and cracked pepper, and serve with a nice sweet white and a spinach salad.
