Roasted Turkey Breast!

Hey guys!

I wanted to ask for your favorite recipes for Roasted Turkey Breast. I bought a big one yesterday and have yet to make one that I really *loved*. So... if you have any good recipes, please respond! Thanks!

Although my instructions (gleaned from many other sources) apply to chicken, I'm guessing it might apply to a turkey, as well. Take or leave the info as you see fit. :)

If the breast has skin, stuff under it (carefully, so as not to rip the skin) butter, lemon juice and fresh herbs (thyme, oregano, sage, and the like). Also, spread the outside (skin) with butter. Cook on a rack in a roasting pan, with the "top" (the meatiest) side up for about 15 minutes, then turn so that the "top" side of the breast is turned down.

Brine it. I use Alton Brown's recipe for brined turkey. It's great.
