Does anyone have a good recipe for broccoli casserole. One of my family members made one this year at Christmas and I forgot to ask who made it so I could get a recipe. Thanks

casseroles, meal: side dish, vegetable: broccoli, search: recipe

This is the "trashy" version, but it's the version most people I know think of when they think broccoli casserole, and it's quite tasty:

Broccoli Casserole

16 oz. frozen broccoli florets, cooked and drained
1/4 c. chopped onion
2 cans Campbell's Cream of Mushroom Soup
1/4 c. mayonnaise
~1 c. shredded cheddar, or to taste
pepper
~1/2 sleeve of Ritz crackers, crumbled

Mix soup, mayonnaise, and shredded cheddar, and season with pepper. Add broccoli and onion, mix well, and pour into greased 9x9 casserole dish. Top with cracker crumbs and bake at 375degF for 45 minutes or until bubbly and golden brown on top.

Here is how I make mine, its kind of thrown together not really measured but it turns out good everytime.

2lbs fresh broccoli (cut into bite sized florets, dispose of stems)
half a block of velveeta cheese
1 sleeve of butter crackers (ritz)
1 small can of french's french fried onions
melted butter
milk

I steam the broccoli till tender, you can also boil it in rapidly boiling salted water. Drain, in the meantime cut the velveeta into cubes and put into a microwave safe container, cover with about two cups milk and microwave until melted, adjust if it is too thick it should be the consitancy of cheese sauce for nachos. Put ritz crackers and french fried onions into ziplock bag and crunch em up with some melted butter. Put broccoli into casserole dish, pour over cheese sauce and generously coat the top with the crumb mixture, bake about 20 mins at 350 (keep an eye on it cause it might brown a little faster with the butter crumbs on top) and ta-da!
