What exactly qualifes to be called a truffle? Is it just a chocolate shell with soft chocolate inside? Or something broader ( Read more... )

A true truffle has no hard chocolate coating, its just lightly rolled in cocoa powder so it closely resembles an actual mushroom truffle.

I just made chocolate/caramel/peanut butter truffles, no hard coating, and I rolled the in coconut.

Truffles are little balls of ganache, which is chocolate melted with heavy cream. When it cools, it takes on that luscious texture. That's right, the classic truffle has no shell but is rolled in cocoa so it doesn't melt all over your fingers when you pick it up. Dipping the whole thing in tempered chocolate is an American innovation.
