Vietnamese Chicken Curry

Hi there! Newbie here. This is an awesome rendition of Vietnamese chicken curry. Relatively simple, quick, and very tasty. Hope you like it. =)

INGREDIENTS
  • 4 tsp. salt
  • 1 tsp. crushed red pepper
  • 2 tbsp. sugar
  • 6 tbsp. curry powder
  • 6 tbsp. tomato paste

cuisine: vietnamese, meat: chicken

Thanks, this looks delicious! Can you recommend a brand of curry powder that you like in this?

I like to use "Madras curry powder" (I think it is just regular curry powder with whole dried bay leaves--I just don't use the bay leaves ever)-- I get mine in a big plastic screw top container at my local Asian market. However, I have made the recipe with normal curry powder (McCormicks and the like) and it has come out nicely.

Sounds delicious! Do you think it would make much difference if I used 1% milk? I don't usually have whole milk in the house.

I think you can get away with it. The end result might be a little bit less creamy, but not by much. I think I've done it with 2% and it has come out fine. =)
