I was the exact same way with the relationships...big on Buffy & Angel when they were together, but then got really into Buffy & Spike as that developed (my Buffy/Angel former self would be shocked!)

I think it took me until the second time I watched Buffy all the way through to really fall for Spike and Buffy together - the first time around I think I was still heartbroken from the Bangel ending and just wanted them back together lol! Then I got older, and realised how awesome Spike and Buffy were :)

I hated the idea when they first started hinting at it and he was falling for her...but then somewhere along the way, as their connection developed and it got all amazing and HOT and emotional, I started shipping them hard. I grew with the show...in lots of ways.
