Here's a dish that many people have only encountered in pretty vile institutional versions.  Mine comes from Paddy Leigh-Fermor's housekeeper and is decidely not vile.

This sounds so good. The next time I'm at the farmers market I'm going to get some of them eggplants and try this. Thank you for the idea.
