Recipe: Toad in the Hole
From: a variation on a recipe I found at Allrecipes.com.
Serves: 3-4


2 eggs
1 c. milk
1 c. AP flour
1 lb. bangers (see note)
1-2 Tbsp. oil

In medium bowl, beat eggs with a whisk; add milk and flour and beat until frothy and no flour lumps remain. Let rest on counter for 1-2 hours.

Heat oven to 400 degrees.

In a 10-12" ovenproof skillet, cook whole sausages in oil over medium heat until browned on both sides (but not cooked through). Place skillet in oven for about 5 minutes to make sure it's really hot.

Remove skillet from oven; quickly pour batter over sausages and return to oven. Bake 25-30 minutes without opening oven door, until top is browned and crusty. Serve with onion gravy (optional).

Note:
Bangers are British sausages. If you can't find them, breakfast sausages are probably the closest substitute in flavor, but you could use any uncooked sausage you like. The step of browning is necessary if the sausages are thick (about 1" in diameter) to make sure they cook through fully. If you are using skinny breakfast sausages, browning would be optional but would give a good flavor as you get the flavor in the oil on the bottom of the pan.
