Mmm, I wonder if I could adapt that to the crockpot? Probably have to reduce the liquid by quite a bit, though. Maybe only 1 c. cider, no water, but perhaps a couple of apples instead of just one, to keep that flavor.

If I do, I will! *g* Since SO doesn't eat beef, it's likely to be a while before I get around to trying this (I have various red-meat things in my freezer right now that I need to eat up before trying something new).

I'm guessing you might need to do the "stir cornstarch into a tiny bit of water and add at the end", if you did the crock-pot thing; the original recipe calls for it to be simmering uncovered for the last 45mins, to reduce and thicken the base, and you wouldn't get that in the crock-pot even if you did use less liquid to start. I can't do that (the cornstarch) because of my diet limitations; I'm sure it would still be tasty with a soupier base, just different.
