Sounds delicious! I could eat this with a few minor tweaks. (Just made a cumin-infused beef shepherd's pie over the weekend. :D )

Does boiling the potatoes in their skins change the taste or keep the nutrients in the water or something? On the (very rare!) occasions I make mashed potatoes from scratch, I peel them first. I don't cook much, but I love looking at recipes.

Maybe it keeps more nutrients in, but I don't know. I usually peel them first myself; this is just how the original recipe had it!
