Recipe: Retro Turkey Loaf
From: Zorba's Heart-Healthy Recipe of the Week
Serves: 6-8


1 medium red onion, diced
1 medium green pepper, diced
2 lb. lean ground turkey
1/2 c. tomato sauce
1/2 c. dry bread crumbs
1 egg white, lightly beaten
2 Tbsp. brown mustard
2 Tbsp. olive oil
1 tsp. Worcestershire sauce
1/2 tsp. garlic powder
1 tsp. salt
1/2 tsp. white pepper
1/4 tsp. cumin
1/2 c. ketchup

Heat oven to 400̊. Spray baking sheet with nonfat nonstick spray.

Spray nonstick skillet with spray. Over medium-high heat, sauté onion and bell pepper for 5 minutes, until soft. Set aside.

In a large bowl, mix ground turkey, onions, peppers, tomato sauce, bread crumbs, egg white, mustard, olive oil, Worcestershire sauce, garlic powder, salt, white pepper, and cumin. Spread into a 5x10" loaf on baking sheet. Spread ketchup over top of loaf.

Bake 50 minutes or until meat thermometer inserted in center registers 180̊. Let stand 10 minutes. Serve warm.

Notes:
My SO was looking for good turkey meatloaf recipes, and heard about this one on NPR. The original calls for ground turkey breast, but it's awfully dry that way; he tried it with regular lean ground turkey and that seemed better and more flavorful, though of course it has somewhat more fat.
