I promised someone at Dal that I'd give her this recipe, so I figured I'd post it here and print the page out later--and incidentally share the recipe with any banana bread fans who don't have access to my old Canadian Living Cookbook (which really is a great old cookbook.)
Banana Loaf
1 cup [250 mL] Mashed very ripe bananas
** Note: the riper the better, but if you don't have time to wait for bananas to get overripe and mushy, freeze the bananas and then thaw them. **
Heat oven to 325 F [160 C]
1 cup [250 mL] granulated sugar
1/4 cup [50 mL] vegetable oil
1/2 cup [125 mL] sour cream
2 [2] eggs, beaten
1 & 1/2 cups [375 mL] all-purpose flour
1 tsp [5 mL] baking powder
1 tsp [5 mL] baking soda
1/2 tsp [2 ml] salt
In large mixing bowl, combine bananas, sugar, oil, sour cream and eggs; mix thoroughly.
In separate bowl, mix together flour, baking powder, soda and salt; add to banana mixture, mixing until just combined.
Pour into greased 9 x 5-inch [2 L] loaf pan.
Bake in 325 F [160 C] oven for 1 - 1 & 1/4 hours, or until tester inserted in centre comes out clean. Cool in pan 5 minutes before turning onto rack to cool completely. Slice to serve, butter if desired. Makes 1 [awesome] loaf.
