After several weeks of partying and dining out and living extravagantly, we figured it was time for a return to healthier eating here at Chez Erin & Mary. Never fear! The cabbage is SO GOOD ROASTED OMG. Seriously, just quarter it, toss a little olive oil, lemon juice, maybe some balsamic vinegar or some worcestershire, salt, & pepper together, ladle some over each piece, then wrap 'em all in foil and roast them for about half an hour at 425. NOM NOM NOM.

Ooh, ooh, if you like cabbage, I also recommend this recipe: so delicious. Chickpea flour is sooooo delicious.
