I wonder if this is one of those things you have to mature into. My dad likes his meat really, really rare, and I used to fight with the rest of the family for the few pieces of flank steak that he'd grudgingly allow to brown a bit. Then a couple of years ago, some switch flipped in my taste buds, and now I prefer it closer to his way.

My boyfriend, on the other hand, grew up on carbonized meat, and still panicks if it's more than just a little pink. Baby steps, I suppose.

The first time I ordered steak I swallowed my vegetarian WTF reflex and ordered it medium rare. I loved it and have ordered it that way ever since, although I loathe undercooked meat of any other variety (and I include eggs in that category).
