Which would be better armor...
Teflon or chainmail?

One property of Teflon is that it's not very resilient. As an anti-friction agent, it doesn't need to be.
You can scuff the teflon lining off of a frying pan with a fork, and teflon-lined gun barrels need to be replaced very often.
On the other hand, many good armor styles make use of deflecting angles.
Something as relatively flat as chainmail of any sort would probably benefit from a coating of Teflon.

So it is decided. Teflon coated chain mail that has to be replaced or re-coated after it gets hit.
Wouldn't just the rubbing of the chain mail as you walk cause a good amount of the Teflon to scrap off anyways?

Not if you wore a leather something underneath, not to meantion that there are very few attacks that could actually harm the inside of the chainmail.

Telflon ....all the danger would just slide off.
