It would not be hard (well for a square one). There is some math involved. Knit a gage swatch to determine stitches per inch. Then multiply this number by width of the pad (in inches). Knit till your pad is the desired length and bind off. For wings, you use your gage again. If you want your wings to be 3 inches wide then multiply your gage by 3. Figure out where the middle of the pad is and pick up 1.5 inches of stitches on either side of that. Knit the stitches till the wings are the desired length. You can do triangle shaping on the wings by knitting two together at the beginning and end of every other row

were you thinking of using wool? If so , you could knit up a rectangle that would be large enough to produce a pad after felting. After you felt the rectangle you could just cut out your pad shape.
I was thinking about doing this... I was thinking if you started with the tip of one wing, and knit it sideways, then you could knit a winged one in one piece.... maybe knit a back in wool and a top in cotton, and then put something absorbent inside (terry or something)
