Guns in the Fantasy Genre (No, really it's okay to use them)

Ever notice all the fantasy where they never made gunpowder?

If you say they don't have elements and minerals to make gunpowder (or a reasonable equivalent) then I want to know how this effects your enviroment and why they don't have it.
