When I think about gluten-free foods and the rarity of it, it makes me glad I don't have Celiac Disease, which I was afraid I had. What does PCC stand for?

Making a cheesecake that Greg's dad (gluten-intolerant) will be eating some of. The Pamela's dark chocolate chunk cookies I ended up buying were expensive but awesome.
