Peanut Butter Cookies

As I mentioned before, I’ve been baking an AWFUL lot lately. It’s fun to do and it’s tasty. What follows is my first cookie recipe. It’s based off of two peanut butter cookies recipes I’ve found but I’ve adjusted the amounts of egg and sugar to something that’s not too sweet and sticky. It’s also VERY easy, cheap, and scalable.

I found this recipe for Peanut Butter and Jelly Muffins. 185 calories per muffin and I HIGHLY recommend them. I add in a little dollop of peanut butter in the middle along with the jam, so it's probably a little higher in cals, but so awesome and filling. I also use all wheat flour in them and they were still quite moist.
(Ugh, I hate the word moist. sorry.)

My friend paula also hates the word moist. Funny haha

No flour or leavening agent, eh? Very interesting. I've been on a baking kick lately and looking for something to use up the last bit of extreme clearance peanut butter I've been sitting on well past its expiry date. I'll have to give this a try.

I only had enough potentially manky peanut butter for a half batch, but I made up the numbers somewhat by using a teaspoon instead of a tablespoon for scooping. I was impressed how at the ease of the making and the fact that they baked up and look like normal peanut butter cookies despite the dearth of ingredients. Pretty tasty too, though either my four year old Jif had less sugar than your discount peanut butter or it'd started to turn as they could have used a bit more sugar.

I take back everything negative I said. I had some this morning (for breakfast) and it was all I could do to not eat the rest of the batch in one go. Nom^3.
