Chang Rai should be your destination of choice if you want real heat with your curry. The chilli salads are usually really perky being mostly chopped up chilli and a bit of vinegar and fish/seafood dishes always tasted hotter to me. If you get the chance have the fried chicken it looks like KFC but tastes like heaven, not hot just tangy and delicious.

Amyway if its too hot you can't taste all the other amazing stuff in it like, lemon grass, galangal, lime leaves, holy basil and green aubergine.mmmm Thai food (I'm hungry now)

Apparently Goan Sausage from Goa (surprisingly) is a very hot stew type thing, and is the hottest thing my dad has ever tasted (and he used to be a curry fiend in his prime).

Home-made hot and sour soup is lovely, takes about 5-10 minutes to make, and can be made as hot & sour as the cook wants (and has no tomatoes!)

Kick me for the recipe I use once you're back in this country...
