Pecan Pie

I'm back from visiting the family and just starting to catch up on everyone's posts! While I'm doing that I thought that I'd show off my pecan pie. *g* It's a classic style pecan pie and the leftovers are sitting in my refrigerator calling me right now. I'm looking at your absolutely scrumdilliumptious pie and recipe, strongly lamenting my allergy to nuts right now :( Is there a nut free alternative combo for this recipe?

Don't lament! The custardy part is my favorite part of a pecan pie. Basically I'd double the rest of the filling (but be careful adding it in case it's a bit much for the pie plate -- you want to be about an inch below the edge), pour it in, and then bake until it feels set but still jiggly which will probably be about the same amount of time.

Or you could switch it to a Brown Sugar Pie which may have more flavor since it's all brown sugar instead of brown sugar and corn syrup. I've never made one of these but that picture sure looks good! I may have to!

Being of Italian background, I'm used to being denied many fantastic desserts (except for tiramisu, which I *adore*) due to them being laden with nuts, so I'm used to it :/ Ah, make it into a custard pie instead! Good idea :) Might need to consult Mum about alternative fillings too. She's one of these freak cooks who can throw stuff together and have it turn out wonderfully, so I'm sure she'll have some ideas :D

I'm more of a cake and muffin baking person, but have been curious to try my hand at pie and tart baking. That brown sugar pie recipe looks delicious--thanks for that link! I made a banana cake with caramel icing a while ago, so I wouldn't mind heading into caramel flavoured territory again :)

I'm of Italian background as well but I can eat nuts so dessert time was good. *g* What I didn't like was anise cookies. *bleh* I don't like licorice flavor and my grandma would put them out at holidays and it always seemed cruel to bait and switch like that -- dessert but not tasty.

That banana cake sounds good! I love caramel and caramel + bananas works so well. Generally I make lots of pies, crisps, tarts, and the like since my husband is more of pie person and I enjoy working with pastry. Also, they are great ways to use whatever fruit is one hand.

Baked brie in crust is completely yummy and very easy. We'll probably make two of them next year for Thanksgiving it was so popular!

Just want to say thank you for the puff pastry recipe! I am hopeless at cooking but that one seemed simple enough even for me and I finally tried it out tonight and it was a hit! So thank you!
