cilantro-lime-habanero-garlic-&-olive oil potato salad (highly recommend!)
home fried tortilla chips (don't taste anything like the kinds from the bag, but they are so effin good!)
yeasted potato rolls (too much hassel, but they are pretty good)
hard boiled eggs!
Next up: Cole slaw.

1/2 head shredded cabbage
2 shredded carrots
2 stalks chopped celery
1/2 chopped red bell pepper (omitted)
1 T. minced onions (suposed to be red, but I used yellow-brown)
sauce:
1/4 cup cider vinegar
1 tsp brown mustard
1 tsp sugar
1 tsp salt
black pepper
Tabasco sauce to taste
red pepper flakes
1/4 cup vegetable oil
a few strips thin crisp bacon, crumbled.
So you prepare all the veggies, arranging in layers in a bowl. Then then mix the sauce ingredients (excpet oil) allowing everything to dissolve, and then pour over the veggies. Next, heat the oil in a small fry/sauce pan until just smoking/rippling, then drizzle hot oil over everything, in particular the onions. Let sit for a few minutes, then toss and refrigerate to chill. Toss in bacon just before serving. DELISH!
