where is my roux?

What IS it about making a roux and refrigerating it that drives some people crazy? They don't know what it's for, or they DO know but can't stand it for some reason. They throw it out. I worked in a kitchen for my first and only time a few weeks ago, 15hrs on top of the already 40+ at my other job. If it were geologically, fiscally, ethically, or scholastically appropriate, I'd've loved to lend a hand...
