I've acquired a large quantity of raspberries, and am hoping to make some raspberry rhubarb jam. However I only have the low-sugar pectin and can't find any recipes for low-sugar jam. Help? Thanks in advance!

i don't know if it's what you were hoping for, but i have a cookbook that suggests to simply mash (or blend) one cup of berries to smithereens and add an equally mashed (or blended) banana to a saucepan... bring to a boil... reduce heat and simmer until it reaches your desired thickness. it was pretty good... and no pectin necessary. :)

i personally have never had rhubarb, though... so i'm no help there. ;P

Thank you. That's interesting. Maybe banana contains enough of its own pectin?

Rhubarb is extremely bitter, and so is always cooked with sugar. That may, in fact, be why I haven't found a recipe for a low-sugar variety of this jam - you wouldn't want to cut back on sugar. (Though personally I dislike the sweetness of most jam, and probably wouldn't mind a little tartness.)

oh, wait a minute! i HAVE had rhubarb once... and it was very bitter! ;P i completely forgot until you mentioned the bitterness. hahaha.

hmm... well, if your fruits weren't too expensive, i'd say it might be worth a shot. maybe the sweetness of the banana would counteract the bitterness of the rhubarb... just add more banana! i dunno. well, good luck whatever you do.
