MEXICAN WEDDING CAKES
1 c. butter, at room temperature 1/2 c. powdered sugar 2 c. plain flour 1 tbsp. vanilla Dash of salt 1 ( oz.) bag almonds
Mix sugar, butter, vanilla and salt until smooth. Add flour and nuts by hand. Drop by teaspoonfuls on ungreased cookie sheet. Bake at 350 degrees for 20 minutes. After baked, remove and cool and roll in powdered sugar.

i usually make these with chopped pecans instead of almonds, and the dough is easier to handle if you chill it after mixing. roll in powdered sugar while cookies are still warm. OK, sweet.
I heart the aforementioned wedding cookies. You should totally try making churros. I am not sure if you have ever had them, but they are damn good. Here is a recipe. What could possibly be bad about fried dough covered with cinnamon and sugar?! Heh. I hope that helps some!
Since I like this subject, I have another idea. Fruit/jam filled empanadas! You can either buy frozen pastry or make your own, then roll out, cut into rounds, fill with filling, fold over and press closed with a fork. Bake at probably 350 until golden brown. YOu can brush some soy milk or margarine on top and sprinkle with cinnamon sugar!
if you do a google video search for "post punk vegan cooking"- in episode 3 or 4 [i think it is 4] it is all mexican food and they have a great recipe for tamales. they have a website, too, but i dont think it has the delicious looking tamale recipe.
