Microwave Chocolate Cake for One
You can use any microwave safe mug for this. I prefer a larger mug (coffee-house style) because it is easier to mix the ingredients.

Tell me how it turns out! I found the recipe online, haven't tried it yet. It's just a recipe I wanted for my collection, just in case!

I was thinking of substituting yogurt or applesauce for the oil so I could have it before my free day. :)

I just discovered microwave-cake-in-a-mug last week or so. I tried a recipe that called for a lot of no-sugar-added cocoa mix and it came out rather heavy and not terribly sweet or chocolate-y, but of course the sweetener was aspartame, which is notorious for not holding up under heat. Still, it was cakelike enough to encourage me to remember such a dish as a quick snack possibility.

Thanks for the clear directions.

Hey can you share that recipe? I'd love to try it! I imagine it would be similar to the one above, except substitute the sugar and cocoa powder with the hot cocoa mix. Personally I would add a pinch of stevia to offset the sweetness problem, but I like stevia.

Stevia is my new favorite thing. It's rather expensive in the regular grocery stores (like Albertsons). Where do you get yours?

I order it from azurestandard.com. I've bought a lot of organic and natural type stuff from them over the last couple of years. They only deliver once a month, you have to drive to the drop site to pick up the order, and their minimum order is $50, but when I comparison shop I find that many of the prices are lower. I've saved as much as four dollars a bottle on Sweetleaf liquid, over the Whole Foods price. They are one of the wholesalers the small health food stores buy from.

I just put a pinch on the tip of a spoon. Or, you can mix it into a larger mix, like make your own cocoa mix. I've added it to a blend chicory, cinnamon and milk powder. My kids love it.
