...I never heard of having to make a reservation at Applebee's... though I guess you could if you wanted to. Weird, at least to me.

It's to cut down on the wait time.
Because One: With that many people there would at least be a need for TWO tables.
and Two: Arranging for ahead of time, = less wait time.
