So I made ratatoullie a while ago for a potluck, and I really enjoyed it. While searching for what goes in it, I found this recipe that was apparently designed for the Pixar movie.

I used the recipe for the piperade, but just diced up the rest of the veggies and tossed them, and baked the whole thing. I also used this recipe for other suggestions. According to the comments on this page, mushrooms aren't used in ratatouille in France, but I like mushrooms. :)

I just noticed this, but why did you not use eggplant in your ratatoullie? Eggplant is one of the reasons I like ratatoullie!

my mom's been on an eggplant trip for the past 2 weeks. so i subbed calabaza instead. otherwise, i love the long eggplants.
