I had the same problem with one of my courses this year: the prof was teaching us to find our own voice, yadda yadda yadda, but when he edited our work, it came back sounding like what he wrote. So I said "Fuck it" and played to him. *shrug* Sure, it wasn't my best work, but I pulled off a good mark and managed to keep a little bit of my own voice in there.
Are there any fantasy-related courses you could do? Or better yet, do you know of a group of writers who have like-minded ideas? Sometimes the best way to get your writing to be appreciated is to join online writing groups who aren't constrained by The Man.
PS: My old editing group, when the schoolyear is over, will be starting up an online writing community. I'll post the details when I get them.

There are fantasy related courses, but they're just English courses, not creative writing courses, so you just write essays on the stories or books. I'm in a writing club though, and they like my stuff.
Be sure to tell me about your online writing community when it's up
