Looks yummy! I'll have to try this. I don't eat beef stew enough, but when I do, I'm pretty rutty too. Not that I mind, as any beef stew is a good beef stew to me. But I shy away from beer myself, so I owe it to myself to try this and see how it goes. :)

My cousin doesn't have a slow cooker right now (long story) but I wonder if she can somehow do this on the stove. (Hey we managed to do corn beef and cabbage on the stove last night and neither of us had ever done it except in the slow cooker).

Pretty much any crock pot recipe can be done on the stove or in the oven, it just means you have to keep a closer eye on things. I Googled "guinness beef stew stove" and found a number of comparable recipes using the oven with a cook time of an hour and a half to two hours.
