Mountain Magic: Spellbinding Tales of Appalachia will be released from
Woodland Press. My story, "A Recipe for Rain and Rainbows," is all about the magic of pie baking.
To countdown to publication day, I'm holding a special blog promotion in the form of a recipe exchange. For five days, I will post a different theme along with one of my all-time favorite recipes. In the comments, you can post one of your favorite recipes for that theme, as well as your website and/or blog link. In return, I ask for you to link back to my LiveJournal from your own blog/Facebook/Twitter/etc. We promote and fatten each other up all at the same time!

Crock Pot Beef Sandwiches Au Jus
This crock pot recipe is adapted from the October 2002 issue of Betty Crocker Magazine (yep, another recipe from the same magazine; it provided me with several signature recipes while I was a newlywed). The result is a simple and delicious hunk o' meat that you can use for sandwiches, quesadillas, salads, or whatever you like! The leftovers also freeze well. There is no taste of beer in the meat; just hearty, good flavor.
Slow cooker recipes are great to make during NaNoWriMo! Not only do they save time on cooking day, but you often get several days of leftovers out of a meal.
2-4 lbs rump roast
1 (1 ounce) envelope onion soup mix
2 teaspoons sugar
1 teaspoon dried or fresh oregano leaves
1 (14 ounce) can beef broth
1 (12 ounce) beer (can or bottle)
2 garlic cloves, minced
8 sandwich buns
1. Trim any huge amounts of fat from the beef. Place beef in slow cooker.
2. Place dry onion soup mix, sugar, oregano, broth, beer and garlic in crock pot.
3. Cover and cook on LOW setting for 8 to 10 hours, or HIGH for 5 hours.
4. Slice or shred beef, and place meat on sliced sandwich rolls.
5. Serve with the meat juices for dipping the sandwiches.
