Grilled Eggplant. Cut it in half long ways...or slice it long ways for however many you have. Marinate it in Olive Oil and some salt..then add seasoning like Basil and Oregano. Heat the grill up, re season, and watch. Usually takes about 5 to 10 minutes. It's good stuff.
That can be your main course. It's DELCIOUS and it is normally used as a meat replacer.
Sides?
Well, seeing how I gave you something meditrainish, a good salad would do nicely. Have some kind of vinger dressing.
And..probably some satuted spinich over the stove. Use olive oil and the spices again.
I'm not sure about girlled potatoes in that fashion, but probably red or new potatoes seasoned in the way, chopped up and satuted. make sure you do thin slices as it doesn't take as long. :x
