Fresh cucumber in yoghurt (non-flavored) and mint (and possibly onion if you like onion) is always very good. We used to make that out of the garden every summer when I was growing up =)
Well, sadly, I don't like yogurt either. :-( Never have. Only in cooked Indian recipes and such. But I expect the sour-cream recipe would also be good with yogurt for my SO, that's a good idea.
Alas, it is not meant to be. Maybe cucumber and tomato sandwiches? Also, I'm terribly envious of your fresh veggies. I think I'll be making a trip to the market tomorrow morning...
Or kappa maki? or something Indian with a cooling (but spicy) kachamber salad? Or lovely northern european cucumbers in vinegar (with some sugar) and some little prawns?
PS -- I'm sorry about the A/C, but really glad you mentioned it. I have to go look at them and maybe buy two of them today.
*nods* We have central air, so it's a bigger PITA than window units when something goes wrong! (Although admittedly nicer when it's working...) Good luck finding good ones for yourself!
It's going to be mostly Asian this week, actually. But I think I'll stick with the cukes in sour cream, I looked at the recipe and it's less s.c. than I'd remembered, so I might be okay with it.

I hope that your mechanical stuff improves - it always feels like they're ganging up on you when more than one goes wrong.

Me, too. I'm really crossing my fingers that whatever's wrong is simple and cheap to fix. I'm not sure we could manage replacing the AC right now!
