For candy-making, you may want to use cane sugar and not beet sugar. Although they are both 99.5% sucrose, I've found that cane sugar works better for candy - it crystalizes much more easily than beet sugar and forms larger crystals.

im specifically making hard candies in molds, not rock candy, in case that wasnt clear. if you have any experience with that, id lovelovelove to hear about it. ive never tried it, so i dont know how hard or easy it will be.

i do know it needs to be at very high temperatures, and there may be a particular recipe i have to use to get the results i want. this is why i need to do a bunch of research and experimentation really soon. im actually kinda freaking out about it and scared it wont work and ill have to scrap the whole thing.

I just remember never getting beet sugar to the point where it would solidify properly - it just became a thicker and thicker syrup, and there is some point where you can't boil any more water out because it's burning.

It's been a while since I've done it, so I'm not too good for details.
