i contacted LJ Support asking for the spam to be deleted (DONE!) and wondering how to add a mod/maintainer because ours was AWOL - and they removed the previous mod and added me

I think moderated posts would be good. That way it cuts down on spam. Moderated membership is kind of a pain (IMO). As long as the posts are moderated, even if a spambot did join, they wouldn't be able to post, and chances are the accounts would be deleted in a few days anyway.
If this community was more active, I'd say go with mod memberships, but since it's not, it doesn't seem like you'd have your hands full when dealing with moderating posts. :)

Moderated membership? Definitely. Makes it a bit easier to weed out the spammers. If that doesn't stop it, maybe then go to moderated posting. And I mod a few communities. I can help out if need be!
