Sweet potato pecan pudding a la Firefly's - the final recipe

As I posted before, I attempted to reverse engineer the Firefly's sweet potato pecan pudding. The first attempt came out just a bit too sweet, so I made some adjustments and we made it for Thanksgiving dinner. I think we've hit the recipe on the head with this attempt!

I cannot begin to tell you how happy I am to have found your Mock Firefly's Sweet Potato Pecan Pudding! It's my favorite, too!

I have exhausted myself and Google searching endlessly for the recipe. I was going to 'wing' it like you did Valerie and hope for the best. Now I don't have to ;-)

Thank you for having this posted. After 7 years it's still relevent. I started with 2 cups of potatoes, halved the ingredients, substituted margerine for butter and almond milk for milk. A Firefly's resturant open and closed in my town. I wish it were still here, but I don't miss the sweat potato pudding any longer. This is a keeper. Thanks.

Warm or cold, pudding cups were a part of my childhood routine. I even had a special pudding-eating spoon.
