wine review: Caymus cabernet sauvignon

Feb 11, 2008 11:14

Ultimately, it's just a bottle of wine.
But was a bottle it was...

The nose was deep and bold.  It was dark like a London fog.
The first taste was of raisins and blackberries.  There was a spiciness like an elderly flamenco dancer... mature, and smooth jointed.
There was a complexity and layered depth that I've never tasted in a wine.  It made me focus inward and sense it in the core of my being.
It was tannic, as a Cab Sav should be... but the tannins were softened with dinner (tomato/basil/mozzarella salad, dry rubbed New York Strip, steamed broccoli and roasted baby red potatoes) and the wine paired beautifully with the food.
The finish was amazingly long, and I could taste it in my mouth for minutes after swallowing, like it couldn't bear to let go of me.

It was worth it every penny.

79. Buy and drink a $100 bottle of wine. (completed 2/10/08)
