U should go! I used to give campus tours at southern Oregon and I could really be thorough in my talks when I didn't have to rush back for the next tour. And a lot of the profs had time to chat with prospective students. U can always go back later to steep in the bustle of college in session. You can't always get good personal attention from the admissions office
id say still go on monday. i went before school was in session, and i went afterwards (to an open house because my dad wanted to see it too and didnt go with us the first time). there are a lot of people who do stay and see what is going on on campus and others that just visit, and talk to a few faculty and leave. it all depends on what YOU need to make your decision. if you know this is where you want to go, then maybe all you need to do is go talk to people and see the campus. if you really want to see what life is like, on this particular campus, then you might want to reschedule. also, if you just want to see what life is like on a college campus, you could always indicate your interested in one thats closer to your house, and check that one out, just to see what college life is like. also, there WILL be students around campus, even if its not as many as normally are there. theres always kids there during the summer, and some will move back early and stuff. talk to them, they will usually be honest about whats going on on campus
