Between this and the possibility that Dean continued sacrificing his own food needs in favour of keeping Sam fed during lean periods while they were growing up... Yeah, that might have kept him the shorter.

(Sam could have also had a tendency to eat healthier than Dean all his life - eating more vegetables while growing up can result in a person exceeding their predicted height. I know this first hand because it happened with my brother.)
