Completely Misnamed Pumpkin Pie

When we left Eugene, I took my pile of cooking notes from next to the stove and packed them in a box. I have been intending to copy them to LiveJournal for a while, but just never get around to it. So, now that we are in Seattle, I thought I'd type in each recipe after I make it. This is a Russian recipe that was called "Pumpkin Pie" (at least, that was what I thought it was). However, it is really more like a squash cake, and miraculously, Joel likes it. Here is my version of the completely misnamed pumpkin pie.


Completely Misnamed Pumpkin Pie

400g squash, cooked
190g butter
3/4 c white sugar
1/4 c brown sugar
3 eggs
2 c flour
1 t cinnamon
1/2 t salt
1 t baking powder
1 c oatmeal
1/2 c dried cranberries
1/2 c nuts

Combine squash and butter in a food processor. (Can probably be done by hand if you really mash the squash.) Add eggs one at a time and process. Add sugars and process. Combine flour, cinnamon, salt, and baking powder in a bowl. Add to the food processor and process until just mixed. Remove mixture from food processor (if you want to do it right) and mix in oatmeal, cranberries, and walnuts. (You can use a spoon to mix them in the food processor bowl, but they won't mix super well.)

Bake in a 9x9 (or so) pan at 350F for about half an hour or until a toothpick comes out clean.
