something easy to make!

Hello everyone. My husband's work is having a potluck tomorrow and I need something easy to make. I'm already making bacon wrapped weenies, but I need something else. Any ideas? Something like an appetizer would be great!

This was my standard pot-luck dish, people liked it so much that they'd complain if I brought anything besides this. Towards the end of our time in NC, I was making 2 pans because it went so fast. It is NOT healthy, but it is easy and very yummy. We don't eat this at home!

Heart-Attack Potatoes

2lbs frozen hashbrowns - square cut, defrosted
1/2 c melted butter
1/4 c chopped onions
1 can cream of chicken soup
2 C sour cream
10 oz cheddar cheese
1/4 cup milk or more as needed if mixture looks too dry
breadcrumbs to dust on top

Combine all ingredients, top with breadcrumbs and bake in a 13x9 pan at 350 for one hour.

Buffalo Chicken Dip

2 cooked and shredded chicken breast
1/4 cup hot sauce
1 (8 oz.) package fat free cream cheese
1/2 Tablespoon fat free Ranch dip mix
1/2 cup fat free sour cream
1 cup fat free cheddar cheese
1 (4 oz.) can diced green chilies

In a medium microwave safe bowl; combine the chicken, hot sauce, cream cheese, ranch mix, sour cream, cheddar cheese and green chilies. Mix well to combine. Microwave 30 seconds at a time, stirring often until the mixture is warm and smooth.

Serves: 10 (approx. 1/3 cup each)
Per Serving: 89 Calories; 1g Fat Less than one gram dietary Fiber

I asked him if he wanted me to make this one. He LOVES Buffalo Chicken Dip and I've never made it.

My pleasure! The Buffalo Chicken Dip is incredible! Add bleu cheese if you like it - I don't, so I leave it out, but it would go well!

princessbunny's FILs Cheesy Dip!

Cheese Dip
16oz. Mexican Velveeta
16oz. Regular Velveeta
8oz. shredded cheddar
2lbs. ground beef
1lb. hot breakfast sausage
1 packet taco seasoning
12oz. jar of picante sauce

Melt cheeses in crockpot. Brown meats with taco seasoning.

While that's melting, brown 2 lbs of ground beef and one lb of hot breakfast sausage in a pan with an envelope of taco seasoning.

Mix meat with cheese, add picante sauce. Serve.

Reuben Dip
INGREDIENTS:
1 cup sauerkraut, drained
1 (8 oz.) cream cheese
1 (6 oz.) shredded Swiss cheese
6 ounces diced corned beef
2 tbsp. Thousand Island Dressing

PREPARATION:
Drain and rinse sauerkraut, mix with cream cheese and Swiss cheese. Add diced corned beef and Thousand Island dressing. Cover and heat on low until cheeses are melted, stirring occasionally to blend all ingredients.

Serve warm with crackers or cocktail rye bread

I looooove this one. I usually make the Crispy Pitas that the recipe calls for, but they're more time you have to spend on it, so I'd just pick up a bag of tortilla chips to eat with this instead ( ... )
