• We got to try the meatloaf Casey made at MM last night. It was fair. I’ve had much better. Not that I’m faulting her, I think it was probably just the ingredients. But it wasn’t too bad. I’ve made it before with a recipe from one of my books and it was awesome, so I’ll just use that next time. On Saturday we’ll try another one of the meals

2 lbs ground beef (i preferred ground sirloin as it's leaner and not as greasy)
3 small cans (8oz) tomato sauce
1/2 sleeve of saltines, crushed (you can use any crackers you like, really)
1 tsp salt
1 tsp pepper
1 egg
1 green bell pepper, chopped + seeds removed
1 medium onion, chopped
Preheat oven to 350. Mix beef, saltines, salt, pepper, egg, bell pepper, onion, and 1 can tomato sauce in bowl. Make two loaves, and place in a 9x13 baking pan. Cover with foil, place in oven for 50 minutes. Remove, check for doneness, and if done inside, open the other two cans of tomato sauce and pour over the top. Place uncovered in oven for 5-10 more minutes, to cook the sauce on to the top. Since this recipe makes two loaves, you can easily freeze one for eating later. I used to enjoy meatloaf sandwiches for lunch the next day. They're gooooood. Anyway, enjoy! And feel free to modify as needed. For example, some folks prefer to top their loaves with ketchup. I do not, because I don't like sweet stuff on meatloaf.
